Les rillons de Touraine

Small pieces of lean pork belly, seasoned and then pan-roasted before being preserved in fat… In the Touraine, rillons are considered a jewel in the crown of prepared pork dishes. Relatively unknown outside of the department of Indre-et-Loire due to their limited shelf life (two to three days), they are very popular within it. Rillons feature regularly on local restaurant menus, either served warm as a vital ingredient of a Tourangelle salad or baked within a Touraine quiche.
