Fricasee of Racan Pullet with Beer and Woodland Mushrooms

Fricassée de poulette de Racan à la bière...

Ingredients for 4 people

- 1 pullet (young hen) of 1.2 kg
- 600 g of your choice of mushrooms, cleaned
- 100 g of shallots
- 1 l of beer
- 1 clove of garlic
- 2 tablespoons of thick cream
- Grenaille (small, new) potatoes
- Sprigs of chervil for garnish

Cut the poultry into 8 pieces. Season each with salt and pepper, then coat with flour.
Brown the poultry pieces in a heavy pot with a little oil and the chopped shallots.
Degrease the pot and then add the beer.
Let simmer gently for 20 minutes.
Remove the chicken from the pot, strain the cooking liquid and put it back on the heat. Add the cream and bring to the simmer again.
Add the mushrooms and let cook for 10 minutes.
Add the chicken back to the pot to keep warm.
When ready to serve, arrange the chicken pieces on a serving platter or on plates, accompanied by boiled new potatoes.
